It’s best to fill the porcini risotto mixture as a gift in a nice canning jar that the recipient can reuse. I used a 500 ml preserving bottle from Weck because it looks good. The most important thing is that the jar closes well and that no moisture or air gets to the ingredients, so that they stay fresh and last.
Then just hang a pretty tag with the cooking instructions on the jar and you have a beautiful homemade gift!
Ingredients & Instructions for the Risotto Mixture With Porcini Mushrooms
Recipe for 4 people
- 250 g risotto rice
- 2 tsp vegetable stock
- 30 g dried porcini mushrooms
- 30 g dried tomatoes
- 25 g pine nuts
- 25 g cashew nuts, natural
- 1 tbsp parsley
- 1 tbsp thyme
- 1 bay leaf
- 1 jar
Add fresh when cooking
- 1 large finely chopped onion
- 1 tbsp olive oil
- 125 g fresh Parmesan
- 1 dash white wine
- Salt, pepper to taste
Place 3 bowls each of 100 g, 100 g and 50 g of the risotto rice in one bowl. Mix the second 100 g with the fine-grained vegetable stock and the dried thyme. Halve or quarter the large dried porcini mushrooms, depending on their size, and set aside 1 nice whole porcini mushroom. Cut the dried tomatoes into strips..
First put 100 g of plain rice in the waking bottle. Then press the beautiful porcini mushroom against a display side with a spoon handle and pour in the dried tomatoes. Now pour in the pre-mixed 100 g rice. Then layer the dried porcini mushroom pieces on top and then the 50 g plain risotto rice. At the end, just pile on the parsley, bay leaf, cashew and pine nuts. Done!
The Instructions How to Cook the Porcini Mushroom Risotto

Heat the olive oil and sauté the risotto mix with the onion. Then deglaze with a dash of dry white wine and gradually pour in about 1 l of water, stirring constantly. Grate in the Parmesan and stir. At the end, season with salt and pepper.
